Taltherian Def-Opts usage?

 I am just working on the next to last quest in the Taltherian chain, and on the def-opts usage, do i want to install any shield and defense module, even non standard ones, or just researchable thrusters/dampeners?

All you can even if it is the cheapest shield/ defense. To save space if you have the higher ones on uninstall them and but the smallest ones on then fit as much as you can in the other NS mods.
