what happens when my produced minerals excedes my cargo space?
does the remainder remain "on planet"?
or do i lose it bc wasn't able to store it all at once?

so i won't lose them?
right now i have prod. of 100 mineral, cargo of 75, which is 750 mineral, if i sleep for 8 hrs i have 800 mineral. when i recieve minerals it will only accept 750?
will the rest remain "planet side" awaiting revieving?

You lose them. Don't let it fill up!

You only lose minerals if the number of minerals you have stored is greater than your rank capacity. So if you will be offline for 8 hours and your minerals will fill that capacity in 7 hours, then you lose 1 hours of mineral production. This has nothing to do with the cargo capacity of your ship.

However, the question I think you're trying to ask...

If you have more minerals than your cargo space will allow, just cash in your mineral shipment more than once until it is all gone.

Minerals that are cannot be held in the cargo are retained on planet(s) storage.
So receiving minerals using the button will not result in "wasted" minerals. (From Planet to Cargo transfer)

However if your planet storage becomes full, anything past capacity will be discarded regardless of your production rate.

@Odragon It's safe to assume he has more than one planet, and per planet capacity is 500 -_-'. clearly he's talking about cargo. Just saying :P

Clearly? There is nothing clear in this topic other than I think between the 4 people who've answered him, we've answered EVERY possible permutation of his question!
