You can't really choose your own ship at the beginning of the game.I think it would be a good idea to have a small amount ship to choose from.I don't now if you can choose ships later in the game or not.

your ship is based on your race and i belive there are 6 to chose from at the start plus several unlockable races

theres already a discussion about this, and Dan has stated that some races are getting a revamp

Well when a new person joins they can't see the ships.
