I recently saw a ship which had "AI Supercomputer x2" equipped in Devices. How is this possible or was it, perhaps, a glitch?

Yes, if you still recall the ship you should report it to Dan with the "Contact/Report this App" button. It might just be a glitch on how it displays the modules, but it may be something that player's done to cheat the system.
EDIT: As long as you're sure it wasn't a Sha'din Supercomputer or AI Core.

Sorry, I cannot recall what ship it was but I am sure that they were Supercomputers. It was probably a glitch.

There was a known bug where it was possible to do this. A number of players figured out the glitch and abused it. Dan forcibly removed the extra modules those players had and supposedly fixed the glitch, but if you see anyone with more modules than they should have, report them immediately. It's totally against the rules to exploit the game and have more modules than you should have.
